This is a 1 year full time course.

This qualification will have a particular focus on commodities.

The topics that you will undertake include:

• Legal and social responsibilities in the professional kitchen
• Financial control in the professional kitchen
• Stocks, soups and sauces
• Fruit and vegetables
• Meat and offal
• Poultry
• Fish and shellfish
• Farinaceous dishes.

Assessment

To gain this qualification, candidates must successfully achieve the following assessments:

• One externally set, externally moderated assignment.
• One externally set, externally marked exam, sat under examination conditions.

Entry requirements

Typically you will need 5 or more GCSEs at A*-C.

Exact entry requirements for each course are advised at interview, however extra emphasis will be placed on Maths and English or Welsh (1st Language) GCSEs.
