University College Birmingham offers a range of expert training, consultancy and business development services to a variety of industry sectors in the West Midlands and beyond.
Hospitality, catering, bakery and confectionery are key specialist areas within the University. Impressive facilities include a Food Science and Innovation Suite, which can be hired out, 2 state-of-the-art training bakeries, 2 specialist chocolate patisserie rooms, specialist cake and sugar craft rooms and two award-winning public restaurants. Our baking and product development laboratories include specialist equipment such as large planetary machines, industrial ovens, spiral and high-speed mixers, chocolate tempering and enrobing equipment, rack and deck ovens and retarder provers.
UCB has developed strong partnerships with leading companies all over the country such as Callebaut, Fermex and Mondelēz which means we can offer unique access to top industry professionals via guest lectures. We also have a close working relationship with The Worshipful Company of Bakers. Our bespoke apprenticeship, in collaboration with Mondelēz, provides our students with the opportunity to gain invaluable industry experience in specialist areas such as artisan confectionery production, creativity and innovation, and consumer behaviour in the food industry.
As a Bakery Centre of Excellence, UCB are the winners of several competitions, including awards gained at the Alliance for Bakery Students and Trainees (ABST) conference, specialist exhibitions and other cake awards.
As industry experts, our staff can offer bespoke services including work-based training, new product development, market research, prototype development, primary and secondary sampling and competitor research.
For companies seeking on-site training in the workplace, staff can devise tailored solutions aimed at updating and building on employees’ existing skills and ensuring best working practices. The University hosts regular business development workshops aimed at food and drink businesses.
Looking to the future, to encourage young people into the industry, the University runs several academies, including a Young Bakers Academy, Young Chefs Academy and Young Waiters Academy. Aimed at 13 to 15 year olds, each course lasts between 7 or 8 weeks and is held on a Saturday, teaching a range of practical skills.
