This qualification is an Award requiring achievement of 8 credits. Candidates are encouraged to work at their own pace following individual programmes of learning. The length of time taken to complete will depend upon many factors but we expect most candidates to complete within 3 - 6 months.

An ideal student for this course is one who is motivated and passionate about working in the bakery industry and with an interest in making and baking a wide range of cakes, breads, scones and pastries. Your learning journey will cover many aspects such as; maintaining a safe, hygienic and secure working environment, working effectively as part of a hospitality team, maintaining, handling and cleaning knives, maintaining food safety in a hospitality environment, and preparing, cooking and finishing a wide range of basic dishes.

Your learning journey will cover many aspects such as; maintaining food safety, the health, hygiene, safety and security of the working environment, developing productive working relationships with colleagues in a hospitality environment, and preparing, cooking and finishing a wide range of complex dishes. You will also need to take some responsibility for the planning and supervision of other peoples work.

The Diploma at Level 1 is offered on a full-time basis, plus further opportunity for extracurricular experience during the evenings and weekends at functions/events.
The course of study will include practical and production sessions in larder, pastry and kitchen, front of house waiting on and reception to include functions/events on and off the premises. Other sessions include, related theory, administration, tutorials, resource based learning, portfolio development.

The Advanced Technical Diploma in Professional Cookery will help learners undertake advanced skills and techniques in producing dishes, enabling them to undertake roles within a kitchen, whether in kitchen & larder or the pastry section.

Your learning journey will consist of workplace visits and workshops to enhance or develop skills in areas such as complex Butchery, Fishmonger, sustainability, coaching, and financial management. The chefs will also be required to plan, prepare and produce complex and innovative dishes for an event and critically reflect on their own performance.

This qualification is a Certificate requiring achievement of 27 credits. Candidates are encouraged to work at their own pace following individual programmes of learning. The length of time taken to complete will depend upon many factors but we expect most candidates to complete within 12 months.

This qualification is an Award requiring achievement of 10 credits. Candidates are encouraged to work at their own pace following individual programmes of learning. The length of time taken to complete will depend upon many factors but we expect most candidates to need between 6 and 12 months.

This qualification is a Diploma requiring achievement of 37 credits Candidates are encouraged to work at their own pace following individual programmes of learning. The length of time taken to complete will depend upon many factors but we expect most candidates to complete within 12 – 18 months.
